Preheat the oven to 200°C (Th 7). Allow the fromage blanc to drain. Wash, dry and finely chop the chives. Separate the egg whites from the yolks. Add the yolks to the fromage blanc and keep the egg whites cool. Add the grated cheese and finely chopped chives in the fromage blanc. Mix well for a smooth and uniform mixture and add pepper. Beat the egg whites until stiff and gently add the fromage blanc mixture. Butter a soufflé dish and pour in the mixture. Put in the oven and bake for 30 minutes.Serve right out of the oven.
