Muffins with Goat Cheese and Zucchini

  • 1 zucchini
  • 80 g fresh goat cheese
  • 100 g flour
  • 1 egg
  • 2 teaspoons baking powder
  • 2 tablespoons olive oil
  • 6 cl semi-skimmed milk (1,5 % fat)

Directions

Preheat the oven to 180°C (Th 6). In a bowl, sift the flour and baking powder. In another bowl, beat the egg with oil and milk. Add the washed zucchini cut into small pieces and crumbled goat cheese. Mix the two preparations without working the dough too much. Divide the preparation in 6 oiled muffin moulds. Bake about 25 minutes. Check the cooking by inserting the blade of a knife: it must come out dry. Let the muffins cool for a few minutes in their mould. Remove from mould and enjoy.
