Cheese and herb omelette with roasted peppers

  • 6 tablespoons Edam cheese (40 % fat)
  • 4 eggs, beaten
  • 2 tablespoons olive oil
  • 2 teaspoons herbs (oregano, basil, thyme)
  • 1 teaspoon pepper
  • 1 chopped onion
  • 2 roasted peppers
  • 250 g pasta

Directions

Add olive oil to a nonstick skillet and heat. After mixing the onions with the eggs, place in skillet. Add the herbs and pepper. Let cook for a few minutes and turn the omelette. Spread the cream cheese and cook another 1 minute. Fold the omelette in half and serve immediately. Accompany with roasted peppers and pasta.
