Apple and Cinnamon Muffins

  • 250 g flour
  • 2 coffee spoons baking powder
  • 2 eggs
  • 100 g sugar
  • 245 g natural yoghurt
  • 50 g cooking oil
  • 2 apples
  • cinnamon
  • 1 sachet vanilla sugar
  • grated orange rind

Directions

Grease a muffin tin for 12 muffins with margarine and preheat the oven to 175 degrees. Grate the apples, sprinkle with cinnamon and vanilla sugar, then put on one side to stand, so the juice can come out. Dry part: Mix the flour with the backing powder. Moist part: Mix the eggs wit hthe sugar, then withthe yoghurt and the grated orange rind. Then squeeze out the apples and mix the juice in too, and also the oil. Mix the dry part with the moist part and mix the squeezed our grated apple into the batter. Portion out into the moulds and bake for 20-25 minutes.

Nutrition Tips

You can reduce the phosphorous content by replacing the baking powder with baking soda.
