Thai flavoured Fish Parcel

Ingredients

  • 200 g long-stem broccoli
  • 2 seabass fillets (about 150 g each)
  • A small chunk of peeled and shredded ginger
  • 1 stalk of lemongrass (outer layer removed, finely chopped)
  • 1 Red chilli, finely chopped
  • 3 spring onions, chopped
  • 200 ml reduced-fat coconut milk
  • 1 30x30 cm piece of foil lined with non-stick paper

Directions

Preheat the oven to 200°C.  Blanch the broccoli till tender then drain. Put the broccoli in the centre of the baking paper (that has been placed on top of the foil). Sit the fish on top and scatter over the ginger, lemongrass, chilli and spring onion. Mix the coconut milk and fish sauce and spoon over each piece of fish. Scrunch up into a parcel and cook for 20 minutes.
