  • ½ kg carrots, trimmed
  • 13 gr (1 tbsp) extra virgin olive oil
  • 15 gr thinly sliced mintDash of fresh ground black pepper

Directions

Preheat the oven to 220°C (425°F). Arrange a single layer of carrots on a baking paper placed on a baking tray.  Drizzle with olive oil and season with pepper. Roast for 20 minutes until tender and brown, stirring twice while cooking. Sprinkle with mint and serve.
