Wash and grate the cucumber, add salt and allow it to drip for 10 min. Then squeeze the cucumber.
Wash and dry the wild garlic, cut it and mix it into the cucumbers. Mix the yoghurt with vinegar and a tsp. of oil and add salt and pepper to taste. Fold it into the cucumber-garlic-mix.
Cut the paprika into small cubes, cut the spring onion into rings and crumble the feta. Then cut the toasted bread into cubes and roast them with the residual olive oil in a pan.
Now the prepared tzatziki can be decorated and served with the croutons, paprika, spring onions and feta.
Instead of the Greek yoghurt you may also try a mixture of regular yoghurt with creme-fraiche or sour cream.
