Rabbit with herbs

  • 600 g rabbit
  • 2 shallots
  • fine herbs
  • 240 g fresh tagliatelli

For the marinade:

  • 1 tablespoon oil
  • juice of 1 lemon
  • 1 tablespoon white wine
  • 2 garlic cloves
  • rosemary
  • sage

Directions

Prepare the marinade, add the cut rabbit and let marinate for 1/2 day. Drain and carefully dry the pieces before roasting them in an oven dish. Once the pieces are fully browned, moisten with the pre-filtered marinade. Add the finely chopped shallots. Cook for 90 minutes in the oven. 10 minutes before serving, sprinkle with chopped fine herbs. Serve with fresh tagliatelli.
