Pumpkin cookies

  • 320g flour
  • 1 tsp baking powder
  • 1 tbsp soda
  • 1 tbsp cinnamon
  • 1 tbsp ground nutmeg
  • salt
  • 300g sugar
  • 115g soft butter
  • 120g pumpkin puree (in a glass or tin; if not available, make your own)
  • 1 egg
  • 1 tbsp vanilla extract

Directions

Preheat the oven to 175 ° C. Cover the baking tray with baking paper.
Mix the flour, baking soda, baking powder, cinnamon, nutmeg and a pinch of salt.
In an additional bowl use a mixer to blend the sugar and butter  until frothy. Gradually add the pumpkin, egg and vanilla extract until well blended.
Include the flour mixture until smooth dough arises.
Using a tablespoon, place the dough on the baking tray in portions (about 35 cookies).
Bake in preheated oven for about 15-18 minutes (until edges become firm).
Remove from the oven and allow to cool for 2 minutes. Transfer cookies to a wire rack to cool completely.
If you want, you can also decorate the pumpkin cookies with icing.
