Ginger cookies

Ingredients

  • 125 g honey
  • 125 g sugar
  • 50 ml cream (30 % fat)
  • 225 g flour
  • 10 g cocoa powder
  • 50 g sponge fingers
  • 1 teaspoon baking soda
  • 1 teaspoon lemon zest
  • 1 teaspoon gingerbread spice

Directions

Boil the honey with sugar and cream and allow to cool. Grate the sponge fingers finely and knead with the remaining ingredients to form a smooth dough. Make desired shapes using baking moulds and bake for about 15 min at 180 °C.
