Ingredients (2 Servings)

  • 1 tablespoon of extra virgin oil
  • 1 clove of garlic
  • 80 g chicken
  • 80 g rabbit
  • 2 veal sausages
  • 200 g rice
  • 1 pinch of salt
  • 1 pinch of safron
  • 1 pinch of paprika
  • 2 eggs

Directions

Put oil in an earthenware casserole pot on simmer. Mince the garlic and brown slightly. Add the rabbit, chicken and sausage cut into chunks, add a pinch of paprika. Sauté until browned. Add the rice and saute a bit. Add twice as much water as rice. Allow to boil until the water is absorbed and the rice is dry (about 18 minutes). Beat the two eggs and add them on top of the casserole. Bake the casserole in the oven until the eggs form the crust that gives the name to the dish.
